This study looks at how different people react to green coffee, which is rich in good-for-you stuff called polyphenols. These are natural compounds found in coffee that can help with health. We want to see if green coffee helps with weight, heart health, and inflammation in people who are overweight. Some people might get more benefits (high-responders) than others (low-responders).
In this study, participants will drink green coffee and regular roasted coffee for 12 weeks, with a break in between. During the study, you'll have 6 visits where blood, urine, and stool samples will be taken. We'll also check your blood pressure and body composition. We'll study how your body absorbs these compounds and look at your energy use and physical activity.
We're also interested in your genes and lifestyle, like your diet and sleep, to understand why people react differently to coffee.
